World’s Most Delicious Gluten Free Vegan Cookies, ONE Bowl

The perfect gluten-free vegan cookies. These are my go-to cookie for all occasions. They are quick, easy, and freaking delicious! I have been adjusting this recipe for about 3 months and I think I finally have it near perfect.

COCONUT OIL

yes, hello I am using coconut oil & it is controversial at this point in time. Coconut oil is in shame for its high amount of saturated fat. It is advised that no more than 7% of calories come from saturated fat. Currently, most Americans are consuming more than 11% of calories from saturated fat. Likely, if you’re diet isn’t high in saturated fat, you will be below the 7%. Use with your best judgement or schedule a consultation with me to see if this is right choice for you. Other oils can be substituted, or a vegan butter works fine.

Coconut oil raises LDL but also raises HDL, the happy cholesterol (if you’re studying for the RD exam like me this is also known as a positive correlation). There is no strong evidence to showing that coconut oil is helpful or potentially harmful. Moderation is a word that is tossed around quite a bit. Coconut oil is a prime example of moderation. I use coconut oil in this recipe because it gives it amazing flavor and I don’t make them that often.

For this recipe make sure the coconut oil is melted or the cookies won’t turn out. If you are using another type of oil that will work as well as long as it is liquid.

FLOUR

One of my favorite nutrition facts is that half of your daily grains should be whole grains. When I’m baking I always like to make sure half the flour is whole wheat and half is all purpose flour. No worries if you don’t have whole wheat flour on hand this time. You can use 2 cups all purpose flour and it will work just fine.

UPDATE: I’ve tried this recipe using all-purpose gluten-free flour and it worked very well! at a 1:1 ratio.

Recipe

  • 1/2 cup melted coconut oil

  • 1 cup brown sugar

  • 1/4 cup unsweetened almond milk

  • 1 Tbsp vanilla extract

  • 1 cup whole wheat flour

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 3/4 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350 F

  2. In a small bowl mix together coconut oil, brown sugar, and vanilla. Once mixed add flour, baking soda, baking powder, and salt.

  3. Mix ingredients together until incorporated then fold in chocolate chips.

  4. Roll cookie dough into small balls and put on baking sheet and bake for 8 minutes.
