January is Banza’s resolve to eat more pasta campaign. I’m resolving to eat more pasta because I combined pizza and pasta together. The two most iconic Italian dishes in one. Now that is something I can definitely resolve to do for this year.
Surprisingly this dish is quite healthy. Using all plant-based ingredients increases the amount of fiber and nutrients you get with each bite. I used a great quality pasta sauce adding a serving of red vegetables. For me, pizza-roni is way healthier because I don’t have to decide on pizza or pasta or a little of both. I can have them both at the same time! I thought about putting pasta on pizza, but that may be too weird.
1 (8 oz) box Banza pasta
1 (24 oz) bottle of marinara sauce
1 bell pepper
1 cup spinach
1 (8 oz) package shredded vegan mozzarella cheese, divided
Preheat oven to 350 F.
Cook Banza according to package instructions. While waiting chop up veggies.
Once pasta has cooked (~7 minutes) strain and put back into sauce pan. Add in sauce, pepper, spinach and 4 oz vegan mozzarella cheese. Mix together then transfer to 10” cast iron skillet.
Bake for 10 minutes or until cheese is melted.
I used Aldi vegan mozzarella cheese and it melted way better than any other vegan cheese I’ve tried.
If you don’t have a cast iron skillet you can use any oven safe baking dish.
