Vegan Chocolate Bark, Two Ways
Happy Valentine’s Day My Loves!
Valentine's day is a hit or miss for everyone, either you love it or hate it… there is no in between. Unless you’re the person who loves going to stores the day after to get discounted candy, lol. I used to get all the discounted candy, but finding vegan candies can be a little difficult. A lot of times packaged candies have a long list of ingredients as well as a lot of unnecessary added chemicals and sugars. Not to say all candy is created equal because I’m sure there are some great options out there! I personally enjoy making chocolate bark at home and other candy type items at home. Chocolate bark is a healthier option for celebrating Valentine’s Day with something sweet.
Making chocolate bark is something quick and easy to make for everyone because it’s so customization. I use the formula below based on what I have in my pantry at the time.
Use this formula to create a great tasting chocolate bark every time
Choose a chocolate base
Pick out a dried or freeze dried fruit (fiber)
- raspberries -diced plums -mango
- strawberries -apricots -banana
- cranberries -raisins -pineapple
Add chopped nuts + seeds (protein)
-pistachios -cashews -peanuts
-walnuts -almonds - pumpkin seeds
Top with more super-duper foods
-chia seeds -hemp seeds -goji berries
-nut butters -flax seeds
Add a whole grain like pretzels!
I wanted to find dried or freeze dried raspberries because “raspberry rhy” but I wasn’t able to find any at Kroger. I went with strawberries so the Valentines day vibe is still there!
Strawberry Hemp Chocolate Bark
3/4 bag simple truth vegan semi-sweet chocolate chips
1/2 (1 oz) bag of freeze dried strawberries
1 Tbsp hemp seeds

Trail Mix Chocolate Bark
3/4 bag Enjoy Life mini chocolate chips
1 oz of plum amazins
~15 pistachios, crushed
~6 gluten-free pretzels chopped up
Melt chocolate in microwave. Heat for 30 seconds, stir, heat again. Continue until chocolate is fully melted.
Once chocolate is melted spread thin layer onto parchment paper. While still wet add desired ingredients.
Once all ingredients are added place in fridge for ~30 minutes or until hardened. Cut with knife and serve.
I haven’t tried freezing bark for faster hardening. If you try it let me know how it turns out in the comments below
I spread the chocolate pretty thin so it’s not a chocolate overload and I like to go back for seconds!
