Spicy Chickpea Burgers, Vegan AND Gluten Free
If you didn’t already know this about me, I LOVE BURGERS AND FRIES! I usually have frozen veggie burgers in the freezer for quick easy dinners. Recently I rediscovered the chickpea burgers I used to make all the time. I’ve seen some other people make their own burgers and freeze them for later. I really like this idea because not only is it easy, but it’s healthy too. The chickpea burger recipe makes ~9 burgers so it’s the perfect time to try out freezing them since I likely won’t eat 9 in a week.

1 (16 oz) can chickpeas, drained and rinsed
3/4 cup chopped carrots
1/2 red bell pepper
1/4 cup hot sauce
1 cup gluten-free oats
2 cloves garlic, minced
1/2 tsp oregano
Add chickpeas and oats into a high-speed blender or food processor. Combine chickpeas and oats until mixed together. Set aside
In a skillet saute carrots and bell pepper for 2 minutes. Then add garlic and saute for a quick minute. (make sure garlic doesn’t burn)
Transfer chickpea oat combo into bowl with sauteed veggies and hot sauce and oregano. Mix together until combined.
Form burgers and cook in skillet for a few minutes on each side.
The base of the burger is chickpeas and oats. Chickpeas (a.k.a garbanzo beans) are a great source of folate, iron, and protein. The chickpeas are the nutrient powerhouse of this dish. Chickpeas are creamy and can be used in many different ways. Besides this burger recipe I love using chickpeas for hummus as a snack.
